I’m just starting my second week of Dr. Wentz’ Liver Support Protocol from her new book, Hashimoto’s Protocol: A 90-Day Plan for Reversing Thyroid Symptoms and Getting Your Life Back. I made some AIP ketchup last night & ended up with leftover steamed beets. I’m not big on beets, so I needed to find a way to use them, especially since they’re good for detox. This smoothie utilized my extra beets & tasted pretty good, so I’m sharing it for anyone else who isn’t a huge beet fan but wants to get some in. This recipe makes a pretty big smoothie, so you might get two servings out of it. I suggest having the whole thing at once if you’re having it for a meal.
Berry Beet Collagen Smoothie
- 1 cup Canned Coconut Milk I use Trader Joe's brand since it's organic & additive free!
- 3 tbsp Collagen Powder I use either Collagen Hydrolysate from Great Lakes or Collagen Peptides from Vital Proteins
- 1 cup Steamed Beets Mine were in the fridge overnight. I doubt you'd want to use freshly steamed beets.
- 1 large handful Greens
- 1 Frozen Banana
- 1 cup Frozen Blueberries
Add all ingredients to a blender & blend until smooth. Depending on your blender, you may have to scrape the sides once or twice to incorporate some stray greens.
